Christmas Cookies of the Past - 2021
I’m sharing more Christmas cookies from years past. I think this is now one of my favorite things to do around the holidays, and I look forward to it every year. I wish I could take off of work for all of December and just bake every day!
In 2021, I made lacy oatmeal cookies from Mrs. Field’s Cookie Book, lemon crinkle cookies from Grandbaby Cakes, peppermint spritz cookies from Just a Pinch, and chocolate chip cookie dough truffles from Recipe Girl.
Those lacy oatmeal cookies are one of my brother’s favorite cookies, and he requests them from time to time. Given that his birthday is around Christmas, it’s a perfect time to make them. (You can read about them in my FIRST blog post ever here.) And after getting through 2020, making a batch to share with my family was perfect!
I have always liked the look of a crinkle cookie, but many of them are chocolate which is not my favorite type of cookie (I know, I know - not usual!). So when I found that Jocelyn Delk Adams from Grandbaby Cakes website had some that were lemon based, I thought that was a great substitution. And I love the tartness of lemon so these were great to have among the other sweet and rich options.
I usually pick a different peppermint recipe every year. This year I chose the peppermint spritz so that I could use my cookie press. This is the first, and so far, only time using it. I think the trick is to keep the dough and the press cold. I think my dough got too warm, and then it was hard to get a crisp shape and even remove it from the press.
And my most favorite was one I had made for a work cookie exchange a few years prior, the chocolate chip cookie dough truffles! These are so amazing - they are exactly what you think they are. Chocolate chip cookie dough in truffle form meaning they are covered in chocolate and decorated with sprinkles. They are fun to dip in white or milk chocolates and then decorate with a variety of sprinkles or swirls of the opposite chocolate on them. Do toast the flour to make it safe to eat raw.
